Edamole Dip

Use edamame instead of avocado to create this lovely green dip. Top with tasty garlic chilli oil for extra yum!

  • Cook and drain the edamame according to the packet instructions.
  • Place the cooked edamame in a blender or food processor with the sunflower oil, garlic, and the lemon or lime juice. Process until almost smooth.
  • Stir in the finely chopped red onion and season to taste with salt and pepper.
  • For heat lovers, drizzle some chilli oil to serve.
  • Serve with crackers or corn chips
