Easy Vegetarian Quiche
An egg-free vegetarian quiche recipe with yummy health boosts like tofu, spinach and pepper. Add veges to this quiche as you feel and even make mini-me quiches. Perfect vegetarian canapes.
Ingredients
30g Tofu
1/4 cup milk or rice milk
pinch salt, or to taste
pinch pepper
300g frozen chopped spinach, thawed and drained
2 cloves minced garlic
1 diced onion
75 g shredded Cheddar or Tasty cheese
55 g shredded Swiss cheese
1 unbaked 30cm pie crust
Method
- Preheat oven to 180 degrees celcius.
- In a blender, combine tofu and milk; process until smooth, adding more milk if necessary. Blend in salt and pepper.
- In a medium bowl, combine spinach, garlic, onion, Cheddar/Tasty cheese, Swiss cheese and tofu mixture. Mix well, and pour into prepared pie crust.
- Bake in preheated oven for 30 minutes, or until set and golden brown on top. Let stand 5 minutes before cutting.
Feel free to add vegetables as you have on hand to make more colourful and healthy! Add in just before final mix before pouring into pie base.
