Warm Mediterranean Rice

This warm rice salad will make your heart sing with olives and sundried tomatoes, fresh rocket and brown rice. Brown rice is better taste, texture and more nutritious than white rice.

For Warm Mediterranean Rice, you will need:

Half a teaspoon rice bran oil, or a spray of RBO Spray
1 cup SunRice medium grain brown rice
2 cups water
Dash of rock salt
1 cup pine nuts
2 tablespoons olive oil
1 290g jar of sundries tomatoes (drained)
1 240 jar of black olives, drained (we prefer un-pitted)
Handful fresh rocket leaves
1 lemon, zest and juice
Rock Salt and fresh black pepper to taste

How to make Warm Mediterranean Rice:

Cook the rice. In a large pot over a high heat, 1 cup of rice with 2 cups of water and a dash of salt. Bring to the boil then pot lid on and reduce to your stove’s lowest setting and let steam for 20 minutes while you prepare the rest of the meal. Water will be all absorbed and rice fluffy and steamed.

Meanwhile, toast the pine nuts for a few minutes in a dash or spray of rice bran oil until just golden. Set aside.

In a pan with the olive oil over a gentle heat, cook the olives, sundried tomatoes and lemon zest. Cook for a couple of minutes then add the lemon juice and pine nuts and the rocket. Add the cooked rice, combine well and season.
