Apricot Fudge
Yummy apricot fudge – why not give it a whirl for that shared morning tea, special homemade gift or just to impress your loved one. Easy enough for the kids to create.
Serves: 8
Ingredients
1 cup dried apricots
30oz brown sugar
1 pkt vanilla wine biscuits
1/2 tin condensed milk
4 oz butter
1/2 cup coconut
Method
- Place all ingredients in a saucepan and heat gently while stirring until sugar has dissolved and butter melted.
- Bring to the boil without stirring and let mixutre boil until the soft ball stage (ie when dropped in cold water forms a ball).
- Remove from heat leave to stand for a few minutes then beat with a wooden spoon until thick.
- Pour into buttered tin and leave to set then cut into squares.
