Avocado, Macaroni and Cheese Bake
If you want to give your mac and cheese a twist try this Avocado, Macaroni and Cheese Bake recipe.
Prep Time: 15-20 minutes Cooking Time: 25-30 minutes Serves: 2
Ingredients
1 avocado, diced
300g macaroni noodles
1 egg
¼ cup reduced fat cream
1 cup grated low fat cheddar cheese
Method
- Cook 300g macaroni noodles in boiling water for 10–12 minutes.
- Drain well and put into a large bowl.
- Beat 1 egg, ¼ cup reduced fat cream and add to the pasta.
- Stir through 1 cup grated low fat cheddar cheese and 1 diced avocado.
- Spoon into baking dish.
- Cook in 180ºC oven for 25–30 minutes, until golden.
