Banana and coconut milk loaf

  • Preheat your oven to 175°C.
  • In a large mixing bowl, mix all ingredients together until you get a lumpy mix.
  • Fold in the shredded coconut.
  • Pour into your prepared loaf tin, sprinkle extra shredded coconut on top and bake for 1 hour or until a skewer comes out clean.

Notes

Note: This loaf freezes well so you could double up the recipe to use the whole coconut milk tin.
