Beer BBQ Mussels

How perfect is this recipe for a Summer BBQ? The ideal ingredients: beer, mussels and a barbie. Go forth and enjoy this delish Kiwiana seafood creation - oh and wow everybody at the same time.

Equipment

  • To cook these you’ll need a lidded pan suitable for barbecue use, or they can be cooked on a stove.

Ingredients
 
 

  • 1 tbsp oil
  • 2 cloves garlic finely chopped
  • 4 spring onions diced, including green tops
  • 24 fresh NZ mussels scrubbed and beards removed
  • 1 can of your favourite beer
  • ground black pepper
  • chives, parsley or coriander freshly chopped, for garnish

Instructions
 

  • Heat oil in pan and sauté garlic and spring onions for 1-2 minutes. Add mussels and pour over beer. Stir, cover with lid and cook until mussels have opened. Discard any that do not open. Season with pepper and sprinkle with finely chopped chives (or parsley, coriander).
  • Serve in individual bowls with fresh, crusty bread.
