Brandy Ice Cream

This Brandy Ice Cream recipe is a traditional family favourite passed down through the generations. The perfect addition alongside that pudding or pav. Brandy Ice Cream is a delight for any festive party or table.

To make Brandy Ice Cream, you will need:
3 egg whites
1/2 cup of caster sugar
300mls fresh NZ cream
3 Tbsp Brandy or Brandy Liqueur
Dash vanilla essence (or 1 tsp vanilla paste – we love Heilala)

How to make Brandy Ice Cream:
Beat egg whites and add sugar until stiff peaks form.
In another bowl, whip cream until stiff peaks form.
Fold cream into egg white mixture.
Add vanilla and brandy and mix until well combined.
Line a loaf tin with tinfoil (or any container that you like), pour mixture into tin and freeze.
Remove from freezer 1/2 hour before serving.

Roll and serve with sprigs of fresh mint or NZ berries in a brandy basket or alongside brandy snaps. At Christmas time, garnish with holly!
