Irish Ice Cream

Get your Irish eyes on with this gorgeous homemade ice cream recipe. All you need is cream, sugar, eggs and… Guinness. Goodness gracious!

Serves 6-8

To make Guinness Ice Cream, you will need:
12 OZ GUINNESS (This is about 350ml, so one bottle or can)
2 CUPS THICK CREAM
2 CUPS WHOLE MILK
3/4 CUP SUGAR
1/2 TEASPOON VANILLA ESSENCE (DEPENDS ON TASTE)
6 EGG YOLKS

How to make the ice cream:
PLACE GUINNESS IN A POT AND SIMMER FOR ABOUT 5 TO 10 MIN (UNTIL ITS ABOUT 3/4 ITS ORIGINAL VOLUME).
SLOWLY COMBINE THE CREAM MILK AND SUGAR IN ANOTHER POT AND ADD THE VANILLA ESSENCE.
BRING TO A SLIGHT BOIL (BE CAREFUL NOT TO BOIL TO MUCH) AND REMOVE FROM HEAT.
BEAT THE EGGS AND SLOWLY BEGIN TO WHISK INTO CREAM MIXTURE.
SLOWLY HEAT THE MIXTURE FOR ABOUT 5 MINS UNTIL IT THICKENS.
REMOVE FROM HEAT AND STRAIN INTO A CONTAINER.
CHILL FOR 2 HOURS.
WHISK IN THE GUINNESS REDUCTION AND BLEND WELL THEN SERVE TO AN ADORING AUDIENCE!
