Breakfast potatoes

This one-pan brunch recipe is delicious and easy. Potatoes, mushrooms, Chorizo sausage and relish. What more could you ask for?

  • 700 g baby potatoes
  • 1 brown onion
  • 1 red capsicum
  • 1 clove of garlic finely chopped
  • Fresh rosemary sprig
  • 1 tsp fresh Thyme leaves
  • 2 tsp paprika
  • 2 tbsp olive oil
  • 2 chorizo sausages cut into chunks
  • 250 g mushrooms
  • tomato relish to serve
  • chopped fresh parsley to garnish


  • Preheat the oven to 220°C bake or 200°C fan bake.
  • Cut the potatoes into small cubes, then dice onion and capsicum. Mix together.
  • Add garlic, rosemary sprig, thyme, add chopped chorizo and the whole mushrooms.
  • Toss together then spread over an oven tray and drizzle over the olive oil and sprinkle over the paprika.
  • Place in the preheated oven for 30 minutes.
  • Shake tray gently during cooking to get golden, crisp potatoes.
  • Remove from the oven and garnish with chopped parsley.
  • Serve with tomato relish on the side.
