Cabbage and bacon hash

This is a quick, midweek one-plate dish and is also budget friendly. Serve on its own or with some crusty bread.

Ingredients
 
 

  • ¼ savoy cabbage
  • 1 tbsp olive oil
  • 2 medium potatoes –Cooked boiled or microwaved and cut into chunks
  • 1 small onion sliced
  • 2-3 slices streaky bacon cut in pieces
  • 1 tsp wholegrain mustard
  • Seasoning

Instructions
 

  • Carefully separate the leaves of the cabbage, remove stalks and discard them. Slice them in thin strips.
  • Boil half depth of water in a large frying pan. Add ½ teaspoon salt. Add the cabbage leaves to blanch for 1 minute. Tip the cabbage over colander to drain well. Set aside.
  • Heat oil in the same frying pan and fry the potatoes and onions until lightly golden. Add the bacon and cook for a further 2-3 minutes.
  • Return the cabbage in the frying pan and mix with the potato mixture. Add Mustard and combine. Season. Cook for a further 1-2 minutes, stirring continuously.
