Carrot Paté Recipe

Carrot Paté may not sound appealing to you, but believe me this is delicious!  I guarantee if you taste it you will get hooked on it. The delicate sweetness and flavour of carrot is enhanced by the orange and manuka honey. Serve with grainy bread or crackers to accompany pre-dinner drinks or a light lunch.

Ingredients
 
 

  • 2 carrots sliced
  • ½ Onion chopped
  • 1 tbsp Olive oil
  • 1 orange finely grated zest & juice
  • 1 tsp Manuka honey
  • 1 tsp Whole grain mustard
  • 2 tbsp Mayonnaise
  • Salt to taste

Instructions
 

  • Heat 1 tablespoon of olive oil in a sauce pan. Add onion and sauté for 2-3 minutes until soft. Add carrots, zest and juice of orange, honey and enough water to just cover carrots. Bring to boil, then cover with a lid and simmer until carrot is soft. This may take 15-20 minutes.
  • Remove the lid and continue cooking until most of the liquid has evaporated.
  • Let it cool to room temperature.
  • Put cooked carrot and onion in a food processor or blender and process until it becomes smooth paste.
  • Add mustard and mayonnaise. Season to taste.
  • Put in a serving bowl, cover and refrigerate at least 1 hour before serving
  • Serve with slices of bread, toast or crackers.

Notes

Tip:  Add 1 teaspoon of mild curry powder to carrot mixture for a twist.
