Cheesymite mini quiches fresh ideas
These gorgeous mini quiches will be a hit in the lunchbox, for afternoon tea snacks or birthday parties. Vegemite has no sugar, unlike Marmite. Vegemite is the perfect Vitamin B boost. Add cheese and you get cheesymite: one of the best combos on the planet. The perfect kids party or lunchbox snack. Feel free to change the fillings to your family faves.

Ingredients
 
 

  • 12 slices Tip Top Hi-Protein Bread crusts removed
  • butter for spreading
  • Vegemite for spreading
  • 60 g bacon finely chopped
  • 80 g mushrooms sliced
  • 60 g tasty cheese grated
  • 2 eggs lightly beaten
  • 80 ml cream
  • 2 Tbsp Superb Herb Chives chopped

Instructions
 

  • Spread each slice of bread with butter then Vegemite. Press bread into non-stick muffin pans, Vegemite sides facing up.
  • Cook the bacon and mushrooms in a frying pan for 2 minutes.
  • Combine bacon, mushrooms, cheese, eggs, cream and chives.
  • Spoon the savoury egg mixture into bread cases and bake at 210ºC for 15 minutes or until set.
  • Serve hot or cold.

Notes

Tip: if you don't have bread, use pastry sheets instead, cut to small square size.
