Chicken Filo Pies

A mid week family dinner with a little bit of wow factor. Light too, with the use of filo pastry that goes crunchy and delicious with a creamy chicken and vege filling.

Prep Time: 15 Minutes Cooking Time: 30 Minutes

Ingredients

1 packet MAGGI Mushroom Soup Mix
¼ cup chopped fresh parsley
1 375ml can CARNATION Light & Creamy Evaporated Milk
2 teaspoons olive oil or cooking spray
500 g skinless chicken breast fillet, cubed
1 red capsicum, sliced
1 red onion, sliced
250g mushrooms, quartered
4 sheets filo pastry
1 teaspoon olive oil, extra

Method

  1. Preheat oven to 180°C.
  2. Combine mushroom soup mix with parsley and evaporated milk. Set aside.
  3. Heat oil in a pan, add chicken and cook until browned, add vegetables and cook for 2 minutes stirring. Add soup mixture and simmer gently for 5 minutes.
  4. Spoon into 4 individual oven-proof dishes and top with scrunched filo, brush with extra oil and bake for 20 minutes until pastry is golden. Serve with seasonal vegetabes or a crisp salad if desired.
