Chickpea Salad
This chickpea salad is made of different ingredients and is bursting with colour, health, taste and flavour. Serve alone or with roasted veges, meat and hummus.
"Food" is one of life's dependable pleasures and it can be a wholesome experience, if you're eating the proper food. This chickpea salad recipe is rich in good carbohydrates and fats, nutrient-dense, lean, full of protein and fibre. It is tasty and will also satiate your hunger.
Ingredients
- 1 can chickpeas
- ¼ cucumber diced
- ½ red onion thinly sliced
- 2 tomatoes chopped
- 1 cup rocket leaves
For the dressing
- ¼ cup Extra virgin olive oil
- 1 lemon juice
- 2 garlic cloves minced
- salt
- ½ tbsp black pepper
Instructions
- Drain and rinse the chick peas and layer them in a salad bowl. Then add all the vegetables and salt. Mix well.
- To make the dressing: Mix olive oil, lemon juice, garlic and pepper.
- Drizzle the dressing over the salad.
Notes
You can use your favourite ready-made dressing. Add some walnuts and dried cranberries to make it more exciting and health packed!
