Coffee Choc Muffins fresh ideas
Aaah, that perfect cuppa coffee. Whether it be 'Blonde with 2 Legs' (that's milk with 2 sugars) or just Plain Black, this coffee choc muffin recipe goes perfectly with morning tea, afternoon tea, lunch and dessert!

Servings 12 muffins

Ingredients
  

  • 2 cups flour
  • ½ cup sugar
  • 2 ½ tsp baking powder
  • 2 tsp of your favourite coffee
  • ½ tsp salt
  • ½ tsp cinnamon
  • 1 cup milk
  • ½ cup butter melted and cooled
  • 1 egg slightly beaten
  • 1 tsp vanilla
  • ¾ cup chocolate chips

Instructions
 

  • Preheat oven to 190°C. Line or grease your muffin tins.
  • In a large bowl, whisk together flour, sugar,baking powder espresso or coffee powder, salt, cinnamon and nutmeg. Set aside.
  • In a medium bowl, mix milk, butter, egg, & vanilla until combined. Don't over mix. Then fold in the chocolate chips.
  • Fill 12 hole muffin cups 3/4 full. Bake 15 to 20 minutes for standard muffins. You can also bake these in ceramic cups if you want a nifty way to serve them!
  • To decorate, sprinkle chocolate, icing sugar and coffee or even a choc drop or a coffee bean or two for that extra buzz!
