Creamy Mushrooms

 

Want to be a fun-guy and make creamy mushrooms? This is the perfect recipe for brunch or lunch on a slow and happy weekend.

  • Finely chop the onion.  Lightly sauté the onion with oil in a large frying pan.
  • If necessary peel and trim mushrooms then slice finely.
  • Add mushrooms to the onion and sprinkle with seasonings and lemon juice. Cover the mushrooms and cook gently about 6 minutes.
  • Lightly stir in sour cream. Adjust seasoning to taste. Cook the mushrooms for 2 minutes more.
  • Serve garnished with sprigs of fresh thyme.
