This Casserole is one of the best kids-can-do-it recipes. Perfect for winter. If you want the kids to start helping out in the kitchen, this recipe is the best place to start. Just 5 ingredients in a big casserole dish and everyone always wants more! Perfect for hot leftover sandwiches, on toast and workday lunches the next day.

Ingredients
 
 

  • 700 g lean mince
  • 1 large onion chopped
  • 1 cup brown rice uncooked
  • 1 tin of Tomatoes
  • 200 g bacon or ham chopped
  • 3-4 cloves garlic

Instructions
 

  • Simply get the kids to put all the ingredients into a big casserole dish and place in a medium 180°C oven for 45 minutes.
  • The tomatoes and their juices cook the rice (mega antioxidants).
  • The brown rice is low GI and low fat. So delicious!
  • The meat just infuses all the flavours.
  • If you prefer less meat, change the bacon to kidney beans and some green vege like beans or celery.
  • Top with garlic cloves in the last 10 minutes of cooking for a health boost.

Notes

Kids also love grated cheese on top for a melt in your mouth finish.
