Easy Vegetarian Quiche

An egg-free vegetarian quiche recipe with yummy health boosts like tofu, spinach and pepper. Add veges to this quiche as you feel and even make mini-me quiches. Perfect vegetarian canapes.

Ingredients

30g Tofu
1/4 cup milk or rice milk
pinch salt, or to taste
pinch pepper
300g frozen chopped spinach, thawed and drained
2 cloves minced garlic
1 diced onion
75 g shredded Cheddar or Tasty cheese
55 g shredded Swiss cheese
1 unbaked 30cm pie crust

Method

  1. Preheat oven to 180 degrees celcius.
  2. In a blender, combine tofu and milk; process until smooth, adding more milk if necessary. Blend in salt and pepper.
  3. In a medium bowl, combine spinach, garlic, onion, Cheddar/Tasty cheese, Swiss cheese and tofu mixture. Mix well, and pour into prepared pie crust.
  4. Bake in preheated oven for 30 minutes, or until set and golden brown on top. Let stand 5 minutes before cutting.

Feel free to add vegetables as you have on hand to make more colourful and healthy! Add in just before final mix before pouring into pie base.
