Edamole Dip
Use edamame instead of avocado to create this lovely green dip. Top with tasty garlic chilli oil for extra yum!
Ingredients
- 2 cups mama san edamame
- ½ cup The Good Oil Extra Virgin Sunflower Oil
- 1 clove garlic
- ½ a lemon or lime squeezed
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- ¼ red onion finely chopped
- S&B crunchy garlic chilli oil optional
Instructions
- Cook and drain the edamame according to the packet instructions.
- Place the cooked edamame in a blender or food processor with the sunflower oil, garlic, and the lemon or lime juice. Process until almost smooth.
- Stir in the finely chopped red onion and season to taste with salt and pepper.
- For heat lovers, drizzle some chilli oil to serve.
- Serve with crackers or corn chips
