Fibre-Filled Kiwi Muffins

These Kiwi Muffins are made using kiwifruit, cornmeal and whole wheat flour for an extra fibre punch. You can find cornmeal at most supermarkets or health food shops.

You Will Need:
3/4 cup white flour
1/2 cup whole wheat flour
1/2 cup cornmeal
3 tsp baking powder
1/2 cup sugar
1/2 cup vegetable oil
2 eggs
1/2 cup milk
1/2 cup kiwifruit, peeled and chopped

Method:
Preheat oven to 200 F. Grease a 12 mould muffin tin.
Mix together white flour, whole wheat flour, cornmeal, baking powder, and sugar. Set aside.
In another bowl, beat together oil, eggs, and milk. Using a knife gently fold in the kiwifruit.
Fold dry ingredients into wet ingredients until just combined.
3/4 fill each muffin mould and bake 15 to 20 minutes until the top spring back when gently pressed or a cake skewer comes out clean.
Rest in tray for five min before turning out to a wire rack to cool.
