Ginger Chicken
Fire up your taste buds with this zingy ginger chicken recipe. Remember, the hotter the chillies, the hotter your meal! Green chillies are hotter than red.

Ingredients
1kg boneless skinless Chicken Thighs
5 or 6 Green Chillies deseeded and finely chopped
5 garlic cloves finely chopped
1 very finely chopped Onion
1 teaspoon turmeric
2-3 teaspoons Corn Flour
1 tablespoon Vinegar
2 tablespoon Sweet Chilli Sauce
Salt
Oil
Chopped coriander
Method
- Cut the Chicken in large chunks. Marinate the chicken in vinegar, soy sauce, lime juice, salt and 1/3 of the grated ginger for a few hours (or even the night before).
- Sprinkle corn flour on the chicken and mix.
- Heat Oil in wok style frying pan and lightly Fry the chicken Pieces till they are brown. Remove and drain on paper towel.
- Fry onions till they are nicely browned and add the turmeric.
- Add the rest of the ginger, the green chillies and sauté a little.
- Add 1 tsp of soy sauce. If you think you need more – go ahead and do it.
- Add 1 tbsp of Hot & Sweet Tomato ketchup, salt and add the fried chicken pieces. Saute till the masala coats the chicken nicely.
- Cook on low till the chicken is done. Add water according to how much gravy you’d like. Garnish with coriander.
- Serve with naan bread or steaming hot rice and pickles.
