Icecream Christmas Cake
A cake recipe with a twist. This icecream cake recipe is ideal for those who don’t like traditional Christmas cakes. Oh, and the kids will love it, fruit and all! The dash of brandy will have them in bed early Christmas night. Perfect.
Serves 6-8
To make Icecream Cake, you will need:
1/2 cup chopped sultanas
1/2 cup chopped currants
1/4 cup chopped glace cherries
1/2 cup chopped mixed peel
1/4 cup mixed glace fruits
1/2 cup chopped raisins
1/4 cup brandy
1 litre plain ice cream (left at room temperature for 30 minutes)
1/4 cup Blanched almonds, toasted and chopped
1/2 cup cream
How to make Icecream Cake:
Firstly, make sure your fruit such as raisins don’t have any little stalky bits.
Combine all fruit and spirits in a suitable bowl and let soak for at least two days until they are nice and plump (orvernight if you don’t have enough time.
Mix fruit mix with the ice cream, almonds and cream.
Put mixture into a 5-6 cup pudding bowl which can go in your deep freezer.
Freeze overnight. To unmold, place the bowl in a warm water, just to help loosen invert onto your serving plate.
Serve with cream and decorate as you desire.
Cook’s Tips:
This icecream cake is a perfect alternative to a heavy, fruit Christmas Cake. Prepare as above but decorate with reds and greens and frosted fruit.
Use chocolate ice-cream instead of vanilla for a nice twist.
