Leek and pea flan
This scrumptious and healthy leek and pea flan recipe will go down a treat with your family for an easy weeknight dinner or Sunday brunch.
Ingredients
- 1 leek 450g-500g trimmed, washed and sliced
- 100 g peas fresh, frozen or tinned
- 100 ml milk
- 150 g natural plain yogurt unsweetened
- 2 large eggs
- 100 g cheddar cheese grated
- 1 sheet ready to use short crust pastry thawed if frozen
- butter
Instructions
- Cook the leeks in a little salted water until soft.
- Add peas to the leek and continue cooking for a few minutes. Drain and squeeze lightly to remove excess water. Set aside.
- Grease a flan dish with butter. Line the dish with short crust pastry. Make some slits with a sharp knife on the bottom of pastry.
- In a large mixing bowl, mix eggs, yogurt and milk. Add half of grated cheese and all cooled leek and pea mixture. Mix well.
- Pour egg and leek mixture onto prepared flan dish.
- Sprinkle remaining cheese on top of flan and bake in 200°C oven for 30-35 minutes or until cooked/set and golden.
