Lemon Cake

A nice light lemon cake perfect for afternoon tea.

You Will Need:

100 g butter

100 g sugar

150 g flour

1 tsp baking powder

2 eggs

1 medium lemon – (juice and zest)

2 tbsp milk

Method:

Heat over to 180

Grease a 20 cm cake tin.

Cream butter and sugar, add eggs one at a time beating well after each.

Add lemon zest and juice.

Sift flour and baking powder together and add to creamed mixture a little at a time – alternating with the milk.

Pour into cake tin and back for 1 1/4 hours or until golden adn sake skewer comes out clean.

Cool in tin for five minutes before tranferring to wire rack.
