Lunchbox Bars

Leonie Bonner of Nelson sent in this easy recipe to make your own snack bars for the school or work lunchbox. Economical and nut-free for those allergic to nuts.

Serves 12

When you make this snack yourself, you know there’ll be no nuts! And you can see how easy this is.

You’ll need:
1 1/2 cup flour
1/2 cup melted butter
1/2 cup brown sugar

Mix together and pat into greased dish.. bake at 150 degrees celcius until golden brown.

Then mix together:
1 cup brown sugar
few squirts Airborne Kids liquid honey
2 tbspns flour
1/2 tspn baking powder
1 1/2 cup flaked coconut
1/2 tspn vanilla

Then all or any combination (to suit your family!):
Almonds (which are actually a fruit, not a nut!), dried apricots, raisins, dates, linseed, pumpkin seeds, sunflower seeds, tahini.

Mix into the flour/honey mix and place on top of base and cook at 180c till nicely browned and cooked.

This recipe makes 12 to 15 thick bars – much better than the 4 or 6 a pack you pay $4 each for!
