Rum, Ginger & Chocolate Dessert with M&M’s

Here you have one very delish, very rich, very colourful dessert. It’s a colourful, kids-can-help recipe (obviously omit the Rum!) made with one of the best biscuits around – ginger-nuts!

Serves: 6

Ingredients

2 packets of gingernut biscuits
Fresh cream
1 Tablespoon sugar or to taste
Cinnamon
1 packet of chocolate chips
1 small packet of milk chocolate M&Ms (for colour)
Dark Rum – enough to coat each bickkie back and front
1 large glass platter

Method

  1. Whip fresh cream and sugar then sprinkle with cinnamon.
    Set aside.
  2. Dip each Gingernut into the rum (both sides) miss this step if your making for kids.
  3. On the flat side of the biscuit, spread a generous amount of the whipped cream mixture.
  4. Keep repeating the process with each bickie and then press all the biscuits together to form a long log.
  5. Cover the top of the log with a thick coating of the whipped cream.
  6. Sprinkle over the chocolate chips and M&M’s to add colour and excitement for the kids or the adults.
  7. Pop into the fridge to chill overnight.

Enjoy with a fresh cuppa coffee.

You can serve this log with fresh fruit to add extra goodness.
