Paul’s Banana Cake

A fave for us kiwis is banana cake. We reckon it's imperative you teach your sons, daughters, future bakers in your life how to make a banana cake. They will share and rely on this cake recipe for years. Thank you Zed for this winning recipe, perfect to whip up for Father's Day.

Ingredients
 
 

  • 2 cups Flour
  • ½ cup Sugar
  • ½ cup Butter
  • 2 large eggs
  • 1 tsp Baking soda
  • 1 tsp baking powder
  • ½ cup milk
  • ½ tsp salt
  • 1 tsp Vanilla Essence
  • 3-4 ripe bananas

Instructions
 

  • Get your tin ready greased and floured. Preheat oven to 175°C.
  • In a bowl cream eggs, butter and sugar. I zap the butter a bit in microwave to soften, but just soften not to liquid.
  • Then to this add your flour, milk, salt and baking powder. Mix together.
  • In another bowl mash your bananas add these to the mix along with baking soda and vanilla essence.
  • Chuck all this in your tin and cook for approx. 35-40 mins.
  • Great with fresh cream and freshly sliced banana atop.
  • Enjoy this. It's so simple!
