Quick and easy lemon and herb dressing

Easy lemon and herb dressing in a bowl served with crumbed fish and wedges.
This dressing is refreshing and works well with any sides.

Equipment

  • 1 Food processor

Ingredients
  

  • 1 cup Superb Herb mixed fresh herbs roughly chopped (use chives, coriander, parsley and basil or a mix of your favourite herbs)
  • 1 clove garlic finely minced
  • 1 lemon grated zest and juice
  • ½ cup extra virgin olive oil
  • salt to taste
  • pepper to taste

Instructions
 

  • Place all ingredients in a small food processor and blend until smooth. Season to taste.

Notes

If you do not have a food processor, just chop the herbs finely and minced the garlic. Mix well.
