Simply the best Tiramisu
An Italian friend gave me this recipe. This dessert repeatedly appears at my dinner parties and is always a big hit. The secret ingredient in this Tiramisu is ‘time’. You MUST make it the night before to allow sponge and cream to amalgamate.
Ingredients
- 1 tub mascarpone cheese 250g
- 70 g sugar
- 2 egg yolks
- 1 cup strong coffee
- 20 sponge fingers
- Cocoa powder or shaved chocolate to serve
Instructions
- Whisk egg yolks and sugar until pale. Add mascarpone. Mix well.
- Make strong coffee. Dip top and bottom sides of sponge fingers in the coffee quickly so only the surface of sponge changed colour (coffee on a plate will help preventing accidentally dropping the fingers into large amount of liquid and make them soggy). Arrange them in a layer on a serving dish.
- Cover with half of the cheese mixture, then arrange another layer of sponge fingers.
- Top with rest of the mixture. Cover the dish with cling film and chill in refrigerator overnight.
- Serve dusted with cocoa or topped with chocolate shavings
