Alison’s Gingernuts

This recipe for homemade gingernut biscuits is just gorgeous. Kiwiana at its best. In fact, if you make this recipe, you're an honorary New Zealander.

Servings 50 biscuits

Ingredients
 
 

  • 100 g butter melted
  • 1 tbsp golden syrup
  • 1 cup sugar
  • 2 tsp ground ginger
  • 1 egg
  • 1 tsp baking soda level, no lumps
  • 200 g plain flour

Instructions
 

  • Melt the butter slowly in a saucepan then allow to cool slightly.
  • Heat a metal tablespoon in hot water, then scoop out a full measure of the golden syrup and stir into your melted butter.
  • Add sugar, ginger and beaten egg (whisk well).
  • Preheat your oven to 180 °C.
  • Mix the baking soda into the now room-temperature mixture.
  • Add flour (no need to sift).
  • Stir to make a soft, workable dough.
  • Use a teaspoon to make small balls, lightly flatten with a fork.
  • Place a baking paper lined tray and bake 10 minutes.
  • Allow to cool on a wire tray then store in an airtight container.
