Alison’s Gingernuts

This recipe for homemade gingernut biscuits is just gorgeous. Kiwiana at its best. In fact, if you make this recipe, you're an honorary New Zealander.
Ingredients
- 100 g butter melted
- 1 tbsp golden syrup
- 1 cup sugar
- 2 tsp ground ginger
- 1 egg
- 1 tsp baking soda level, no lumps
- 200 g plain flour
Instructions
- Melt the butter slowly in a saucepan then allow to cool slightly.
- Heat a metal tablespoon in hot water, then scoop out a full measure of the golden syrup and stir into your melted butter.
- Add sugar, ginger and beaten egg (whisk well).
- Preheat your oven to 180 °C.
- Mix the baking soda into the now room-temperature mixture.
- Add flour (no need to sift).
- Stir to make a soft, workable dough.
- Use a teaspoon to make small balls, lightly flatten with a fork.
- Place a baking paper lined tray and bake 10 minutes.
- Allow to cool on a wire tray then store in an airtight container.
