Bacon, Sweet Stem Broccoli & Potato Fritters
These bacon, broccolini & potato fritters are a show stopping, delicious breakfast alternative.
Ingredients
For the fritters
- 500 g Wilcox Vivaldi Gold Potatoes grated & drained out the excess moisture
- 6 rashers Hellers streaky bacon chopped
- 6 stalks The Fresh Grower sweet stem broccoli cut into small pieces
- ½ small onion chopped
- 1 egg
- 1 sprig Superb Herb Rosemary leaves chopped
- 1 handful of Superb Herb Sage chopped
- ½ cup Chantal Organics plain flour
- 1 tsp garlic powder
- Salt
- Pepper
- Olivado Avocado Cooking Oil
To serve
- 4 tbsp Perfect Italiano ricotta
- 4 tbsp relish of your choice
Instructions
- Fry the bacon with a drizzle of avocado cooking oil in a frying pan over medium high heat for 1-2 minutes. Add the onion, broccolini, rosemary, sage and garlic powder. Continue to stir fry for a further 2-3 minutes until the vegetables are soft. Set aside to cool slightly.
- In a large mixing bowl, mix the grated potato, bacon & vege mixture, egg, salt and pepper. Add the flour and combine well.
- Heat a generous drizzle of oil in a frying pan over medium hot heat. Spoon in the fritter mixtures. Cook for 4-5 minutes each side or until cooked through, crisp outside and golden.
- Serve immediately with ricotta and relish.
