Spicy Beef summer rolls
Colourful and delightful Vietnamese-style summer rolls are light, refreshing, and perfect for warm weather, or any weather.
Ingredients
- 2 packets Farmland Thin Sliced Hot Beef
- 1 cup carrot grated
- ½ cup cucumber julienned
- ¾ cup Superb Herb Coriander
- ½ cup Superb Herb Basil
- ¼ cup Superb Herb Mint
- 8 rice paper wrappers 20cm diameter
- 8 lettuce leaves ribs removed
For the dipping sauce:
- ¼ cup seasoned rice vinegar
- 2 tbsp sweet chilli sauce
- 1 tsp soy sauce
Instructions
- Whisk dipping sauce ingredients in a small pot and heat till warm.
- Toss carrots and cucumber with 2 tablespoons of the dipping sauce in a small bowl. Set aside. Mix the herbs in a small bowl and set aside.
- To assemble: Fill a large bowl with warm water. Dip 1 rice paper sheet for a few seconds until slightly softened. Place on your work surface.
- Place 1 lettuce leaf at bottom of the rice wrapper, leaving 1.5cm clear on either sides. Top with 2 slices of beef, some carrot and cucumber mixture and ? of herb mixture.
- Fold the right and left sides of the wrapper over filling. Fold bottom edge up over filling and roll up tightly. Place seam-side down on a serving platter. Repeat with remaining wrappers. Cover rolls with a damp paper towel during assembly to prevent drying out.
- Serve with dipping sauce.
