Garlic Coriander Pork

This Coriander and Garlic Pork recipe is delicious and full of fresh flavours!

Serves 4

You Will Need:

1 c chopped coriander leaves
4 cloves garlic
Sea salt and cracked black pepper
2/3 c olive oil
4 x 180g pork cutlets
500g baby potatoes sliced
2 green onions sliced
Baby rocket to serve

Method:

Place coriander, garlic, salt, pepper, and oil in a bowl and stir to combine. Place the pork and half the coriander mixture in a bowl and toss to coat. Allow to stand for 10 minutes.
Place the potatoes in a large saucepan of salted cold water. Bring to the boil and cook for 12-15 minutes or until tender when tested with a skewer. Drain and return to the saucepan. Add the remaining coriander mixture and green onions and toss to combine. Set aside and keep warm.
Heat a large non-stick frying pan over med heat. Add pork cover with a tight fitting lid and cook for 3-4 mins each side or until cooked to your liking. Serve with potatoes and baby rocket.
