Pork larb

It's so easy. Served at room temperature, eaten with your hands. Pork - the perfect protein - flavoured with exotic Jasmine rice and wrapped in crisp and fresh cos lettuce. Healthy and light, but a surprisingly satisfying family meal.

Ingredients
 
 

  • 800 g NZ Pork mince
  • 1 tbsp Olivado Peanut Oil
  • 3 cloves garlic chopped
  • 1 tsp chilli flakes
  • 1 stalk stalk lemongrass smashed
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1 lime
  • 5-6 mint leaves torn
  • ½ cup fresh coriander leaves torn
  • ½ red onion
  • 1 pouch cooked Jasmine rice microwave
  • 2 heads baby cos lettuce to serve

Instructions
 

  • Heat Olivado Peanut oil in a frying pan over medium heat. Add garlic, chilli flakes and lemongrass. When fragrant add pork mince and cook it stirring frequently.
  • When the pork is cooked, add brown sugar, fish sauce and juice of 1/2 lime. Mix through chopped red onion, mint and corriander. Set aside.
  • Cook Jasmine Rice per packet instructions.
  • Mix rice and pork mince.
  • Serve on lettuce leaves with more squeeze of lime and chilli if desired.
