Chocolate Pear Clafoutis
Pear clafoutis or Clafoutis aux Poires is a popular classic French family dessert. Any pear variety works well in this recipe, you can use soft ripe and fragrant ones or young and firm ones. Clafoutis batter is usually plain custard flavour but my family love the chocolate twist!
Ingredients
- 2-3 medium pears peeled, cored and sliced into quarters or thin slices
- 100 g plain flour or use 70g flour and 30g cocoa for the chocolate version
- 100 g sugar
- 2 free range eggs
- 1 cup milk
- 3 tbsp butter melted
- 1 tbsp brandy optional
- ½ cup chocolate broken into pieces
- ½ tbsp icing sugar
Instructions
- Grease an oven proof dish with butter. Place sliced pears attractively. Pre heat oven to 180C.
- In a large bowl mix flour, cocoa (if using) and sugar. Make a well in the middle and add eggs in it. Gradually work the flour mixture into the eggs. When it is almost combined together, pour warm milk gradually. Mix well.
- Add melted butter and brandy in the batter. Mix well.
- Pour batter over the pears and dot with chocolate pieces.
- Bake in oven for 30 minutes.
- Serve hot straight out of oven. Dust with icing sugar if you like.

For a more ‘grown-up’ pear dessert, this red wine poached pear tarte tatin will satisfy the most discerned palates.
