Pineapple Mojito

Beyond the traditional mojito - fresh mint muddled with lime juice, sugar, white rum and a splash of sparkling water - some fresh ideas if you want to get a little flasher, add strawberries, blackberries, watermelon, pineapple or more.
To get in the Mojito Day mood, here's a recipe for a pineapple mojito that takes five minutes to prepare for 5 o'clock drinks. Cheers.

Ingredients
 
 

  • 6 ice cubes
  • 2 Tbsp diced fresh pineapple
  • 120 ml white rum e.g. Bacardi
  • 60 ml lime juice
  • 60 ml pineapple juice
  • 2 tsp sugar or to taste
  • Mint leaves and lime wedges to garnish

Instructions
 

  • Place the ice and pineapple in a cocktail shaker and pour the rum, lime juice and pineapple juice over. Add the sugar.
  • Shake to combine; chill.
  • Pour the mixture into a tall, narrow glass and serve immediately.
  • Garnish with lime wedges and fresh mint.
