Asparagus Pepper and Blue Cheese

Try this gorgeous asparagus salad. The peppery, blue cheese asparagus recipe is a perfect match for BBQ steak, sausages and chicken.

Serves: 4

Ingredients

500g Asparagus, snap off woody end and wash well.
4 Red Peppers, Quarter remove seeds and membrane
2 cloves crushed garlic
4 Tbsp Olive Oil
Salt & Freshly ground black pepper
100g Blue Cheese or Feta Cheese – Crumbled

Method

1. Place asparagus spears, red peppers in a bowl with garlic and olive oil. Season with the salt and pepper and toss well.
2. BBQ peppers for 3-4 minutes on each side and asparagus for 1-2 minutes only (don’t overcook!) Turn only the once cook until just tender and nicely charred.
3. Serve on a  platter alongside your BBQ meats and top with crumbled blue cheese or feta.
