Apricot and Almond Cheese Log

This sweet and savoury cheese log is the perfect accompaniment to weekend drinks, with fresh flavours of apricot, parsley and honey. The almond and apricot bring crunch, colour and flavour balance to the soft goat cheese.

  • In a bowl, mix together the cream cheese and goats cheese with a wooden spoon. Stir in half of the chopped apricots and almonds and season with pepper.
  • Onto a sheet of plastic wrap, form into a log shape and roll with the wrap. Set for 30 minutes in the fridge.
  • Lay the remaining apricots, almonds and parsley onto a long plate. Unwrap the cheese log and roll in the fruit mixture.
  • To serve, lay on a plate and drizzle generously with honey and eat with crackers.
