Banana Pikelets fresh ideas
Pikelets are a staple for a growing kiwi kid's diet. This pikelet recipe has a bit of a twist adding in healthy as bananas. Sooo yummy and the kids can help too! A special Telethon Big Night In recipe.

Ingredients
 
 

  • cup flour
  • 2 tsp baking powder
  • ½ cup white sugar
  • ¾ cup coconut dessicated
  • 1-2 ripe bananas mashed
  • 2 eggs
  • 1 tsp vanilla essence
  • ¾ cup milk you could also try substituting with rice milk for dairy free pikelets.

Instructions
 

  • In a bowl or round jug; mash banana, add eggs and lightly beat.
  • Add in this order: vanilla essence, sugar, coconut, flour and baking powder.
  • Add milk in alternately to mix - little bit of milk, mix, etc, may need extra milk for right consistency (like a thick but runny sauce)
  • Beat for a good minute or so, over beating doesn't seem to matter. Just make sure there are no flour lumps.
  • In a cast iron or heavy bottom frying pan, lightly oil either with extra light olive oil or spray (as doesn't taint taste of pikelets, can add a wee bit of butter for taste but watch as this often goes black after a while). Pour and spread with the back of a spoon to get right shape and to spread evenly (will rise decently)When little air pockets burst on top, ready to flip.
  • Serve with runny honey, Ceres nut butters, cream and jam, lemon and sugar or golden syrup. Mmmm.
