BBQ Vegetable Medley
When the weather is warm, what better way to eat healthy and summery? A vegetable medley all roasted and crispy on the BBQ.
Ingredients
- 3 Kumara peeled
- 4 parsnips peeled
- 4 Potatoes scrubbed clean
- 3 carrots peeled
- 2 small red onions quartered
- 4 sticks Rosemary leaves only, ie. stripped
- 1 handful of Superb Herb fresh thyme
- 1 head Garlic smashed, skins left on
- ½ Tbsp Sea Salt
- 4 Tbsp Olivado olive oil
Instructions
- Par-cook your vegetables in a microwave safe glass bowl for 8 minutes in the microwave.
- Pre-heat the oven solid top griddle on your BBQ.
- In your bowl, coat all the vegetables with the herbs, olive oil and sea salt, toss together and then grill on your BBQ for 30 minutes or until cooked, tossing frequently.
Notes
BBQ Vege Tip: get creative with what you have in the fridge! Don't be afraid to add pumpkin, zucchini, courgettes, capsicums, onion, brussels sprouts, broccoli etc.
