Char-Grilled Chilli Chicken
How can you create chicken nibbles that explode with flavour – we hear you ask? Well here’s how! These truly are finger lickin’ good.
Serves: 4
Ingredients
1 whole chicken, cut into 8 portions
4 cloves garlic, minced
1 tbsp minced chilli
1 fresh chilli, chopped finely
2 tbsp lemongrass, minced
2 tbsp fish sauce
2 tsp tamarind pulp, soaked in a little warm water to loosen
1 tbsp brown sugar
2 tbsp fresh lime (or lemon) juice
1 tsp salt
1 tsp sesame oil
1 tbsp cooking oil
Method
- In a bowl mix all ingredients together until well mixed and sugar has dissolved.
- Add the chicken pieces and coat evenly, turning and stirring the chicken in the marinade.
- Allow chicken to marinate 15-30 minutes, or up to 24 hours (covered and in the refrigerator).
- Layer the chicken in an oven tray lined with foil – saves on washing up! I like to cook this firstly under the grill (or on a bbq) until it is beginning to blacken. Turn it over and repeat on the other side. Then finish cooking it by turning the oven to bake at 200°C and cooking for 20 minutes. It is cooked when inner flesh is opaque and juices run clear.
