Char-Grilled Chilli Chicken

How can you create chicken nibbles that explode with flavour – we hear you ask? Well here’s how! These truly are finger lickin’ good.

Serves: 4

Ingredients

1 whole chicken, cut into 8 portions
4 cloves garlic, minced
1 tbsp minced chilli
1 fresh chilli, chopped finely
2 tbsp lemongrass, minced
2 tbsp fish sauce
2 tsp tamarind pulp, soaked in a little warm water to loosen
1 tbsp brown sugar
2 tbsp fresh lime (or lemon) juice
1 tsp salt
1 tsp sesame oil
1 tbsp cooking oil

Method

  1. In a bowl mix all ingredients together until well mixed and sugar has dissolved.
  2. Add the chicken pieces and coat evenly, turning and stirring the chicken in the marinade.
  3. Allow chicken to marinate 15-30 minutes, or up to 24 hours (covered and in the refrigerator).
  4. Layer the chicken in an oven tray lined with foil – saves on washing up! I like to cook this firstly under the grill (or on a bbq) until it is beginning to blacken. Turn it over and repeat on the other side. Then finish cooking it by turning the oven to bake at 200°C and cooking for 20 minutes. It is cooked when inner flesh is opaque and juices run clear.
