Char roasted mix

The intense flavour of  char roasted vegetables is really enhanced by the wonderful garlic and lemon tastes in this recipe.

Serves: 4

Ingredients

2 medium kumara, sliced lengthwise
2 onions, cut into wedges
2 red capsicums, deseeded and sliced
3 courgettes or 1 medium eggplant, sliced
2 cloves garlic, crushed
¼ cup olive oil
¼ cup lemon juice
2 Tbsp brown sugar
freshly ground black pepper

Method

  1. Preheat oven to 200°C.
  2. Place prepared vegetables in a baking dish.
  3. Combine garlic, oil, lemon juice, sugar and pepper. Pour over vegetables and mix to evenly coat.
  4. Bake in preheated oven for 25-35 minutes or until tender and golden brown.
  5. Alternatively cook on a medium to hot barbecue plate for about 10-15 minutes or until tender.
