Cheesy meatless sausages
Vegetarian sausages made with mac & cheese. These cute bangers will be a delightful dinner that everyone loves.
Ingredients
- 1 box Diamond Macaroni Cheese prepared as per packet instructions
- ¼ cup grated cheddar cheese
- 1 clove garlic crushed
- 1 small onion diced
- 2 tbsp Superb Herb parsley chopped
- ½ cup plain breadcrumbs
- 2 tsp tomato paste
- ½ tsp black pepper
- ¼ tsp salt
- 1 1 Better Egg separated (yolk for mixture, white for coating)
- 1 ½ cups plain breadcrumbs for coating
- oil
Instructions
- Prepare the Diamond Macaroni Cheese according to the packet instructions and let it cool.
- Once cooled, combine the Macaroni Cheese, parsley, diced onion, cheddar, garlic, tomato paste, 1/2 cup breadcrumbs, salt, pepper, and the egg yolk in a blender. Pulse in short bursts until finely chopped (but not a paste).
- Shape the mixture into 6 sausage-like rolls.
- To crumb and shallow fry the sausages: Whisk the egg whites in one bowl. Place 1 1/2 cups of breadcrumbs in another bowl. Dip each sausage into the egg white, then coat with breadcrumbs. Shallow fry for 8-10 minutes, turning frequently until golden brown on all sides.
- To cook in an air fryer: Lightly spray each sausage with oil. Air fry at 200°C for 12 minutes or until golden brown and heated through.
