Chicken chow mein
This recipe for chicken chow mein is tasty, easy and inexpensive. Living up to its Chinese roots with a healthy alternative. The flavour is a nice mix between sour soy sauce and sweet peanut butter, although neither are too overpowering. An under $10 special meal you'll love.
Ingredients
- 250 g spaghetti
- ¼ cup Asian Sesame Dressing
- 600 g boneless skinless chicken breasts cut into strips
- 2 cloves garlic minced
- 1 red capsicum chopped
- 1 onion sliced
- ½ cup chicken stock
- 1 tbsp peanut butter
- ¼ cup soy sauce
- 2 tbsp. chopped coriander
- 2 tbsp. chopped peanuts
Instructions
- Cook your spaghetti in large saucepan as directed on package.
- Heat dressing in large nonstick skillet on medium-high heat. Add chicken and garlic; stir-fry 3 min. or until chicken is no longer pink. Add peppers, onions, broth and peanut butter; stir-fry an additional 3 to 4 min. or until chicken is cooked through.
- Drain spaghetti; return to pan. Add chicken mixture and soy sauce; mix well.
- Spoon onto serving platter; sprinkle with coriander and peanuts.
Notes
For a spicy variation, add 1/4 tsp. crushed red chilli to the hot dressing along with the chicken and garlic.
If pork is on special, rather than chicken: substitute with 600g pork tenderloin, cut into strips, for the chicken and beef broth for the chicken broth.
