Citrus, Nectarine and Blueberry Ice Blocks

Fruit cordials are not only for drinking, and these ice blocks are the perfect excuse to try something more creative with them! A citrus lemonade ice block, dotted with blueberries and pieces of fresh nectarine; refreshingly fruity.

Prep Time: 10 Minutes Makes: 6-10

Ingredients 

  • 2 cups water
  • 2/3 cup of Barker’s Geraldine Citrus Lemonade syrup
  • 1-2 nectarines, diced
  • 1/2 cup fresh or frozen blueberries
  • 2 tbsp fresh mint leaves (we love Superb Herb)

Ice block moulds and sticks

Method

  1. In a jug, combine the water and lemonade syrup. Taste to see if the syrup flavour is strong enough, keeping in mind it will reduce once frozen.
  2. In a bowl, mix together the nectarine, blueberries and mint leaves, then evenly distribute amongst the moulds. Top up with the lemonade mixture, set the sticks into the middle and freeze overnight or until completely frozen. Serve and enjoy.

*Measurements will vary dependant on the size of your ice block moulds. You may need more or less of each component but feel free to judge this as you go.
