Crunchy broccoli salad

Broccoli salad is easy, delicious and oh-so-superfoods good for you. The leafy green goodness of the broccoli plus the addition of nuts, natural yoghurt and citrus in the dressing gives you an antioxidant boost. Be sure to save this broccoli salad NZ classic with friends and family.

Ingredients
  

  • 2 cups small broccoli florets
  • ½ cup red onion chopped
  • 1 cup seedless red grapes halved
  • cup celery chopped
  • 1 cup raisins or sultanas
  • ½ cup nuts chopped (we like brazil nuts or walnuts for eye health)
  • ½ cup greek yoghurt
  • 1-2 spring onions chopped
  • 1 clove garlic chopped
  • 1 tbsp white vinegar
  • 2 tbsp gluten free soy sauce
  • 2 tbsp orange lime or lemon juice

Instructions
 

  • Lightly steam the broccoli until just crunchy.
  • Combine broccoli, onions, red grapes, celery, raisins and nuts in a large bowl.
  • In a small bowl, stir together the yoghurt, spring onions, garlic, white vinegar, soy sauce and juice to create the salad dressing.
  • Toss the salad with the dressing and serve as a main meal for two or four side salads.

Notes

Sprinkle your broccoli salad with sunflower seeds for even more antioxidant, healthy eye goodness.
- Replace the orange juice for water if you don't like a citrusy dressing
- Omit the yoghurt and replace with juice for a dairy free salad dressing.
- Use almonds or cashews
- For even more colour, exchange the raisins for dried cranberries.
