Gluten free brownies

This is an easy 6 ingredients brownie recipe so simple to make, but truly gorgeous. No flour. Gluten free.  Quality of the chocolate makes the difference in end result - wonderful or just average, so make sure you choose good quality dark chocolate at least 70% cocoa content to create your brownies. Serve with whipped cream or vanilla ice cream. Heavenly!

Ingredients
 
 

  • 200 g good quality dark chocolate 70% cocoa, break into small pieces
  • 200 g unsalted butter cut into small cubes
  • 2 tsp vanilla extract
  • 200 g caster sugar
  • 3 eggs beaten
  • 150 g ground almonds

Instructions
 

  • Preheat oven to 170 °C. Line a 26 cm square pan with baking paper.
  • In a large heatproof bowl, put the chocolate and butter. Place the bowl over simmering hot water or in the microwave to melt the chocolate and butter completely. Mix well until the mixture becomes smooth and glossy.
  • Add vanilla extract and sugar, mix well. Then add eggs. Combine well.
  • Mix ground almonds. Pour brownie mixture into the prepared tin and bake for 25–30 minutes. Do not overbake. The top surface should be dry and starts to crack a little, but inside should be still moist and gooey.
  • Cool the brownies on a rack completely before cutting into portions. Dust with cocoa or icing sugar to serve if you like.

Notes

Tip: Add more chocolate chips or/and chopped walnuts to the mixture for even richer finish.
