Greek salad
If you want a salad that is as flavoursome as it is nutritious, you can't go past this Greek Salad. This dish is healthy and delicious.
Ingredients
- 2 telegraph cucumbers sliced
- 1 punnet cherry tomatoes halved
- 1 medium red onion sliced
- 1 â…“ cups fresh parsley coarsely chopped
- 1 â…“ cups kalamata olives drained pitted, halved if large
- ½ cup extra virgin olive oil
- ½ cup lemon juice
- 1 ½ tsp dried oregano
- 1 packet feta cheese
- Salt and fresh-ground pepper
Instructions
- In a large bowl, combine cucumbers, tomatoes, onion, parsley, and olives.
- In a small bowl, mix olive oil, lemon juice, and oregano.
- Break feta cheese into about 1cm chunks and add to your cucumber mixture. Add your Greek Salad dressing and mix gently, adding salt and pepper to taste.
- Serve atop freshly washed salad leaves, preferably Green Fancy or Cos, or any leafy greens you have in your garden.
